Part I

Control and monitoring of Japanese Kitchen in regards of operational expenses and standards.Liases with other section/outlets of the club concerning Japanese food.Plans, implements and controls all food promotion of Japanese restaurantAchieves KBO based on mutually agreed goals.

Part II

Oversee all food production and preparation of Japanese food according to standard recipes.Ensures that food sanitation and hygiene rules are strictly followedTrain and develop Japanese kitchen staff.Control food cost to be in line with budget (food cost, manpower, expenses and breakages)Control expenses and breakages to be in line with budgetControl man power expense to be in line with budgetMaintain positive working environment for employee’s welfare.Ensures that grooming standards are strictly followedEnsures all kitchen equipment to be in good working condition at all timesControls and checks all food purchases/transfers of Japanese kitchen (food and supplies)Prepares daily market listLiaise/communicate with purchasing regarding undelivered produce and comes up with timely solutionSubmits daily/weekly/monthly reports in time to the executive chefPrepares weekly duty roaster for Japanese kitchen, taking operational needs in considerationMaintains proper stock level to avoid any out of stock (86) itemsPerforms all other related duties as assigned.
